"After a lengthy stint in Australia alongside a great group of well known chefs, I made my way back to Blighty with the goal of adding a splash of Pacific Rim influence to modern European dishes. But more than ever I believe in the celebration of our great British pub fare. In recent years Gastro chefs have been guilty of 'over-chefing' their menus with technical terms, but if you cook in a classic style sometimes only classic dishes & descriptions will suffice. After all, if you can't put together a blinding fish & chips, why bother!"
