Following a lengthy stint in Australia alongside various well known chefs, I returned to blighty bringing a Pacific Rim influence to modern British cooking. In the kitchen we strive to use fresh, seasonal British produce with an emphasis on the classics, after all if you can’t cook a blinding Fish & Chips, why bother!
